Some things are small but mighty, and Persian Cucumbers are at the top of that list for vegetables. English cucumbers are seedy and often go bad quickly, and pickling cucumbers have anemic flavour. Persians have delightful flavour, a compact seed chamber, a ton of flavour and a high skin-to-flesh ratio (meaning more nutrition.)
They also hold their texture and don’t weep when used in salads. They are a staple of Salad Time.
When I’m making a lot of salads and sandwiches, I buy them in the 16 pack, but an average person could get by with one 6 pack a week.
