Snow Pea and Hearts of Palm Salad with Ginger Carrot Dressing

Hearts of Palm are a wildly underrated ingredient. While they don’t deliver a strong flavour on their own, they hold onto dressings incredibly well and have a delicious texture that’s snappy without being super crunchy. Snow peas are a great vegetable to have around. If you don’t want to make salad, you can just dip them raw in the dressing of your choice.

This recipe is a gem of Salad Time. It’s a people pleaser, and it is FAST to make. If you don’t want to make the dressing from scratch, you can buy carrot ginger dressing at most grocery stores (it’s the dressing you get at sushi places.)

Ingredients

  • 2 cups snow peas, ends trimmed
  • 4 hearts of palm from a can

For the Dressing

  • 1 carrot
  • 1 shallot
  • 2 inch piece of  fresh ginger, peeled
  • 2 Tbsp rice vinegar
  • 2 Tbsp lemon or yuzu juice
  • 2 Tbsp canola or grapeseed oil
  • 1 teaspoon honey
  • 2 tsp miso paste
  • 1 tsp sesame oil
  • Salt to taste (or use 1 tsp of Ponzu sauce)

 

Directions

 


1Dump all dressing ingredients in a food processor or mini chopper. Blitz until smooth

2Boil water and dunk snow peas for 45 seconds. remove and rinse in cold water. Place peas in your fridge container

3Cut Hearts of Palm into half moon “coins.” Place in container with peas

4Add dressing to ingredients. Put lid on container and shake to fully dress the vegetables. Refrigerate
