Summer is a time when you have access to EVERYTHING that’s good, but you don’t always want to cook.
Here’s a way to enjoy summer by making this salad (prep time: 10 mins) and adding to it a bit of protein (even if it’s a rotisserie chicken from the grocery store) and maybe potato salad or some other side.
This is also a super fast lunch that will tide you over due to the protein from the feta.
This salad is different from the countless ones you’ve had at catered events and people’s homes. This one has a Mexican twist that delivers a serious burst of flavour.
A Note on Ingredients:
Tajin is a spice mixture that includes chili flakes, salt, and lime. It does absolute wonders for fruit, and is a staple of roadside fruit stands in Mexico. You can buy Tajin at most grocery stores and all Latinx markets.
If you don’t have access to it, Mix up chili flakes and salt in a ratio of 2:1 and make sure to add lime juice to the fruit or recipe after applying the Tajin.
Tajin comes in multiple varieties. I use the traditional one (Clasico.)
- 3 cups watermelon, chopped into half inch cubes or chunks
- 1 1/2 cups feta cheese, cubed or lumped into half inch pieces or smaller
- Juice from 1 lime
- 3 Tablespoons Olive Oil
- 1 Tablespoon Tajin Seasoning
